A glass of Merlot and....(check it out, it's healthy!)






Chicken Breasts & Zucchini

with Multi-grain Whole Wheat Italian Bread


Started off with a glass of Merlot, and green olives, Jalapeno Monterrey Jack cheese,  just to munch on while I was cooking.







Slice your chicken breasts in strips, or which ever way you like.  You can cube them.   Sautee them in a couple teaspoons of Smart Balance Margarine (it's really good and healthy, and it tastes like butter).  Add onions if you like.  Mushrooms would be good too.  I diced up a little Vidalia onion and added it after the chicken cooked for a bit.   Brown  the chicken on both sides and let cook a few minutes.  Add a couple sliced zucchini's. Leave the skin on.  Let it cook on medium for a few until the zucchini is done to your taste.  You can cover it for about 5 minutes. I like it with a little bite, not too soggy.  And guess what?  You are done!  And it is delicious!
