One More For Ole St. Patty's Day

This was my own little bar.

This is the very LOUD refrigerated semi-truck that was right behind me FULL of Irish beer.
And, here are some of the very happy party goers!!!!!!

This will be my last Irish joke of the year, I promise!!!

One day an Irishman, who had been stranded on a deserted island for over 10 years, saw a speck on the horizon. He thought to himself, "It's certainly not a ship." As the speck got closer and closer, he began to rule out even the possibilities of a small boat or a raft. Suddenly, there strode from the surf a figure clad in a black wet suit. Putting aside the scuba tanks and mask and zipping down the top of the wetsuit stood a drop-dead gorgeous blonde! She walked up to the stunned Irishman and said to him, "Tell me, how long has it been since you've had a good cigar?""Ten years," replied the amazed Irishman. With that, she reached over and unzipped a waterproof pocket on the left sleeve of her wet suit and pulled out a fresh package of cigars and a lighter. He took a cigar, slowly lit it, and took a long drag. "Faith and begorrah," said the castaway, "That is so good! I'd almost forgotten how great a smoke can be!

And how long has it been since you've had a drop of good Jameson's Irish Whiskey?" asked the blonde. Trembling, the castaway replied, "Ten years." Hearing that, the blonde reached over to her right sleeve, unzipped a pocket there and removed a flask and handed it to him. He opened the flask and took a long drink. "Tis nectar of the gods!"shouted the Irishman. "'Tis truly fantastic!!!"

At this point, the gorgeous blonde started to slowly unzip the long front of her wet suit, right down the middle. She looked at the trembling man and asked, "And how long has it been since you played around?" With tears in his eyes, the Irishman fell to his knees and sobbed, "Jesus, Mary and Joseph! Don't tell me that you've got golf clubs in there too!"
So, from one 1/4 Irish woman to many others,
CHEERS!

Irish Sayings

"Irish Sayings"
May those who love us, love us
And those who don't love us,
May God turn their hearts
And if he can't turn their hearts,
May he turn their ankles
So we will know them by their limping!

~~~~~~~~~~~~~~
Leprechauns, castles, good luck and laughter
Lullabies, dreams, and love ever after.
Poems and songs with pipes and drums
A thousand welcomes when anyone comes.
That's the Irish for you!
~~~~~~~~~~~~

There are many good reasons for drinking,
One has just entered my head.
If a man doesn't drink when he's living,
How in the hell can he drink when he's dead?
Have a Wonderful Day,
Joyce

An Irish Blessing

"Irish Blessing"

May you always have
Walls for the winds,
A roof for the rain,
Tea beside the fire,
Laughter to cheer you,
Those you love near you,
And all your heart might desire.

I Wish You Love,
Joyce

Here are a few tips!!!!

*Get yourself one or two these little brushes. They are great for a quick sink clean up, and you can put your favorite liquid cleaner inside.

*Peel a banana from the bottom and you won't have to pick the little "stringy things" off of it.

*Take your bananas apart when you get home from the store. If you leave them connected at the stem, they ripen faster.

*Store your opened chunks of cheese in aluminum foil. It will stay fresh much longer and not mold.

*Peppers with 3 bumps on the bottom are sweeter and better for eating. Peppers with 4 bumps on the bottom are firmer and better for cooking.

*Add a teaspoon of water when frying ground beef. It will help pull the grease away from the meat while cooking.

*To really make scrambled eggs or omelets rich add a couple of spoonfuls of sour cream, cream cheese, or heavy cream in and then beat them.

*Add garlic immediately to a recipe if you want a light taste of garlic and at the end of the recipe if your want a stronger taste of garlic.

*Heat up leftover pizza in a nonstick skillet on top of the stove, set heat to med-low and heat till warm. This keeps the crust crispy. No soggy micro pizza.

*For easy deviled eggs put cooked egg yolks in a zip lock bag, seal, mash until they are all broken up, add all other ingredients, reseal, keep mashing it up mixing thoroughly, cut the tip of the baggy, squeeze mixture into egg.

*When you buy a container of cake frosting from the store, whip it with your mixer for a few minutes. You can double it in size. You get to frost more cake/cupcakes with the same amount. You also eat less sugar and calories per serving.

*To warm biscuits, pancakes, or muffins that were refrigerated, place them in a microwave with a cup of water. The increased moisture will keep the food moist and help it reheat faster.

*To keep away mosquitoes, place a dryer sheet in your pocket.

*Before you pour sticky substances into a measuring cup, fill it with hot water. Dump out the hot water, but don't dry cup. Next, add your ingredient, such as peanut butter, and watch how easily it comes right out.

*Use your hair conditioner to shave your legs. It's cheaper than shaving cream and leaves your legs really smooth.

*To get rid of ants put small piles of cornmeal where you see ants. They eat it, take it 'home,' can't digest it, so it kills them. It may take a week or so, especially if it rains, but it works and you don't have the worry about pets or small children.

It's Tomato Time

This tomato plant showed up in my backyard a couple of weeks ago. I went out to feed Lido our dog, and there she was about eight inches tall. I got so excited when I saw it I called my grandkids outside to see. They said "Mimi, God sent it to you". So I replanted it in a better place, threw some odorless cow manure on it, stuck a few stakes in the ground around it and there she is. She's growin real fast and I spotted the first buds on her this morning.

I love gardening but I'm mostly growin it for fun, and for the grandkids, and for the fact that it just showed up out of the blue, or because God sent it to me. We live so close to the tomato fields down here, (a little birdie probably dropped the seed in our yard), I can get a whole bag full of tomatoes for about two dollars. I'll keep you up-to-date on how she's doin, I'm gonna keep adding cow manure every week or so.

Let's Make Patty Melts

Ingredients:
1/2-1 lb. Ground beef
1 medium onion
4 slices of bread
4 slices of American cheese
1 stick of butter
Salt, pepper & garlic powder

Dice the onion.

Melt 1/2 a stick of butter in skillet.

Sautee the onion until it becomes translucent.

Remove from skillet and set aside.

In the same skillet cook the hamburger patties until done.

Drain on paper towel.

Melt some butter on the griddle. I do it like this.

Lightly toast the bread on one side.

And then the other side.

Place the patties on each piece of toast.

Then place two slices of cheese on top.

Spoon the cooked onions on top of the cheese.

Place the other piece of toast on top and cook, turning once until cheese is melted.

Serve with french fries or coleslaw if you like.

Enjoy and Have a Good Weekend!

I Wish You Love,

Mimi

A Beautiful Day For Exploring

This is the beautiful blue sky we had yesterday.

It was such a beautiful day, that after I picked up my grandkids from school, we took a little drive around the neighborhood to do some exploring. I wanted to stop by the vegetable stand, which I check a few times a week, and we like riding around looking at everything. It's a little nature trip. We see the tomato fields, the different flowers at the plant nurseries, the palm trees, and the animals. We stop and look at the different animals on the farms, which are usually horses, donkeys, goats, peacocks, dogs, cats, birds, whatever we can find.

These are the goats on the way to the vegetable stand.

Here's one of the tomato fields.

This is the vegetable stand. They pull it up to this field with the tractor.

The onions.

The lovely tomatoes. I just love tomatoes.

The vegetable stand has fresh tomatoes, green, red, and yellow peppers, onions, zucchini, eggplant, jalapenos, cabbage, and watermelons when they are in season. And they are there seven days a week.

This is the vegetable stand tractor.

Here is one of the many plant nurseries.

We always stop to look at the horses.

Tiki huts are very popular and in many of the backyards.

Another plant nursery.

As you can see they also sell potting soil, mulch, rock, and sand.

Plant nurseries are everywhere.

Coconut trees are very popular and you can find cold coconut milk for sale all over Miami.

Many varieties of palm trees are gown here.

They palms are grown and sold for landscaping.

I like the tractors, they make me feel like I'm in the country.

I don't know what they planted here, I think its some kind of bean.

This is a field very close to my home where they grow vegetable and palm trees which you can see in the background.

We moved south to the suburbs about seven years ago to get away from the hustle and bustle of the city. Miami-Dade County is divided right down the middle by Flagler Street and it goes about 300 blocks north and 300 blocks south. So we wanted to go south because it was, and I say WAS, not so crowded. A lot of others had the same idea, and it is growing very fast. But we still have farmland and open spaces, and we're not in the middle of the city. It is more little laid back and I really love it here.

Pink Hibiscus

Today was one of the most beautiful days of the year. Just fantastic. Cool, sunny and blue skies. We awoke and it was 46 degrees and the temperature continued to rise to the mid 70's. It felt so good and was just a perfect day. Tonight when I went outside to take a look at the moon, I saw this Hibiscus bloom, just gorgeous, and had to take a picture. Hope you enjoy it.

Chocolate Cream Pie In A Flash

This is the quickest Chocolate Cream Pie you'll ever make. It won't cost much either. There's really nothing to make except the chocolate pudding, and it only takes a couple of minutes. You can use the cook & serve or the instant pudding. So if you are in a pinch for time and want a quick and easy dessert for when the kids get home from school, or the hubby gets home from work, or maybe you have a desire for some good old chocolate cream pie with whipped topping, this will do just fine. And it tastes real good too.

Ingredients:
1 Keebler Chocolate Ready Crust
1 Jell-O Cook & Serve or Instant Chocolate Pudding Mix
3 Cups of Milk
Whipped Topping

Make the pudding following the directions on the box. Pour into pie crust, cover, and cool in the refrigerator for an hour. Serve with whipped topping. And that's all there is to it. How easy peasy is that????? Enjoy and feel free to have seconds!!!!!
