Kidney & Garbanzo Bean Salad









Ingredients:

1 (16 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can chickpeas (garbanzo beans), drained and rinsed
3 hard boiled eggs chopped
1 cup diced tomatoes
1/2 cup diced green pepper
1/4 cup diced onion
Salt & pepper to taste
1/2 cup Miracle Whip salad dressing

Combine all ingredients in a large bowl. Cover and refrigerate for an hour.

This is a cool refreshing salad for these hot and humid summer months. Hope you enjoy it.

"Oh Crap, She's up!"

These are the women in my family that when their feet hit the floor each morning the devil said "OH CRAP, SHE'S UP!!

My Mom, Barbara, 78 years young, 3 children, homemaker, jack of all trades. Married to my Dad for 51 years. Wonderful wife and mother. Loved to cook and feed everyone and anyone who came to our home.


Grandma Betty, born in Tennessee, beautiful, l child, worked hard and raised my mom on her own, waitress at many famous hotels on Miami Beach most of her life, had a great laugh.

Grandma Daisy, 10 children, homemaker, cook, took in family and friends who needed a place to stay and food to eat, not to be messed with, never wore pants and always wore an apron, ironed her sheets and pillow cases, took mattresses outside to air out, and would beat your ass with a switch!

Aunt Louise, l son who died at age 24 from cancer, beautiful woman inside and out, picked cotton and milked cows at 5 in the morning before school when they lived in Georgia, took care of Grandma Daisy all of her life.


Aunt Nell, adopted to girls, one died at age 24, business woman, owned Mack's Fish Camp in the Florida everglades, loved nature and animals, had many encounters with alligators, rode a four wheeler, nickname "Big Mama".



My Mom today, still spunky!!!!!


These women are very special to me and have influenced my life in many ways. They were strong, respected, loved and loving, nurturing, demanding, capable of doing anything they put their minds to. All have passed except for my mom, who still hits the floor in the morning with bells on, spunky and rearing to go. I am very thankful for that.

Chicago Style Deep Dish Pizza/"Pizzeria Uno" Style

We first made this pizza about a year ago, obtaining the recipe from pizzamaking.com. It was sort of a "mission" because we had never made our own pizza crust before and we made the pork sausage from scratch too. We made one in a cake pan and the other in the caste iron skillet. They were delicious!!!!!!








The Crust
(Makes two 9-10 inch pizza crusts)
2 packages of rapid rise dry yeast
2 cups of warm water
1/2 cup vegetable oil
4 tablespoons olive oil
1/2 cup cornmeal
5 1/2 cups of flour

Dissolve yeast in water in a standard mixing bowl. Add the vegetable oil, olive oil, and the cornmeal, and half of the flour. Beat 10 minutes, then attach dough hook and mix in the rest of the flour. Knead for several minutes with the mixer. Put the dough on a clean counter top and cover with a large metal bowl. Allow to rise until double in bulk, punch down, and allow to rise again, punch down again and you are ready to make the pizza. Oil your deep dish pan. Place some dough in the pan and push it out to the edges with your fingers. Put in enough dough so that you can run the crust right up the side of the pan, about 1/8 inch thick.
The Filling
(For each 9-10 inch pan)

1/3 pound sliced mozzarella cheese
2 cups Italian Style whole peeled tomatoes, drained and squished
1 teaspoon basil
1 teaspoon oregano
2 cloves garlic, minced
Salt to taste
3 tablespoons grated Parmesan cheese
3 tablespoons olive oil
Layer the cheese on the bottom of the pie. Next put in the tomatoes basil, oregano, and salt. Now add whatever you like, Italian sausage crumbled, yellow onions diced, Pepperoni slices, mushrooms, bell peppers, it is all up to you. Last, add the Parmesan cheese and drizzle with olive oil. Bake in a 475 degree oven until the top is golden and gooey and the crust is golden brown, approximately 35-40 minutes. You may want to put some aluminum foil underneath, in case it bubbles over.

An Award and Some Things You Might Not Know About Me!


I received this award from Gypsy Mommy's Kitchen. It was so nice of her, and I am so grateful.

So, I am now up to rule #4 which is where I have to name "7 Things About Myself That People Might Find Interesting". So here goes.

1. I am a native Miamian, born and raised in Miami, Florida and my parents are too.

2. I speak fluent Spanish and fool a lot of people who think I am lying when I tell them I am not Spanish but Irish, Italian, German, & Cherokee Indian. They see my dark hair and eyes and assume that I am Cuban, especially here in Miami. Believe me, it is a very good thing to know Spanish in Miami!!!!!

3. I am a Mortgage Broker but there are no mortgages to be had in this area at this time, the economy is so bad, and some neighborhoods look like ghost towns.

4. I love reading and learning about different cultures, their beliefs, religion, and especially the different types of foods they eat.

5. I hate liars.

6. I love everything about the 50's, the clothes and shoes, the hairstyles, the Ladies and the Gentlemen.

7. I believe in unconditional love.

So these are some things about me, believe me there is much much more!!!

Peanut Butter Brownies....This Is Really Rich!!!!

Ingredients:
One box Duncan Hines Brownie Mix (Any kind you like)
1 stick of room temperature butter
1 1/2 cup of your favorite peanut butter
2 cups of confectioners sugar
2 teaspoons of milk
1 container of your favorite chocolate frosting
Hershey's chocolate syrup


Make the brownies per directions, I added a couple squeezes of Hershey's chocolate syrup to the batter.


Test with toothpick in the middle to make sure it's done.


Remove from the oven and let it cool.


Combine room temperature stick of butter,


with the 1 1/2 cup of peanut butter, and 2 teaspoons of milk,

Add two cups of confectioners sugar,


Blend well with electric mixer.


Remove brownie from cooking pan and place on plate. Spread a good layer of peanut butter mix on top.


Spread a layer of chocolate frosting on top of peanut butter.


And there you have it. WARNING! This is sooooooo rich!!! My goodness gracious!!!!!!
